    Butternut Squash Wellington

    The Wellington is absolutely classic British dish. Traditionally made with beef, our vegan version uses bold colours, wonderful textures and – of course – delicious flavours. Butternut squash is the hero here and we create a lovely mushroom, walnut and thyme stuffing. We also use shop-bought pastry to makes things super easy.     Amy’s Vegan Pizza

    I usually make my own pizza from frozen dough and my own toppings. I’m getting fairly good at it too. But tonight I grabbed an Amy’s Margherita out of the freezer. I’ve been a fan of Amy’s frozen Asian meals so I gave this a try. I did what I’ve done for years, and added my own toppings to the frozen base. Peppers, Vidalia onion and vegan Italian sausage. It failed! The crust was excellent, sauce tasty and my toppings were perfectly done. But whatever cheese substitute they used, was a slimy, horrid tasting mess.     Labor Day Favorite – Vegan Sandwich

    My old self had this dread of turning vegan that was based on my own ignorance.
