Butternut Squash Wellington
The Wellington is absolutely classic British dish. Traditionally made with beef, our vegan version uses bold colours, wonderful textures and – of course – delicious flavours. Butternut squash is the hero here and we create a lovely mushroom, walnut and thyme stuffing. We also use shop-bought pastry to makes things super easy. And with Christmas right around the corner, there’s no better time to treat yourself and your loved ones to this decadent centrepiece! Penne Pasta with Vegan Sausage and Peppers
One of my favorite Italian dishes has long been the Rigatoni Abruzzi at our local Bertucci’s . The dish is somewhat spicy with Vegetarian Italian sausage and green peppers. I’ve been trying to duplicate the flavor and texture as a Vegan dish and I’ve finally got it! Mangia!

Amy’s Vegan Pizza
I usually make my own pizza from frozen dough and my own toppings. I’m getting fairly good at it too. But tonight I grabbed an Amy’s Margherita out of the freezer. I’ve been a fan of Amy’s frozen Asian meals so I gave this a try. I did what I’ve done for years, and added my own toppings to the frozen base. Peppers, Vidalia onion and vegan Italian sausage. It failed! The crust was excellent, sauce tasty and my toppings were perfectly done. But whatever cheese substitute they used, was a slimy, horrid tasting mess. Labor Day Favorite – Vegan Sandwich
My old self had this dread of turning vegan that was based on my own ignorance. I was experienced with the salads, nuts, pasta with plain sauce and veggie burgers I snuck into the trash while eating with vegans I know. I hadn’t done my research. But, I was determined to turn vegan and learn how I, a raw tomato hating, spicy meaty sauce loving old guy could survive on a plant based diet. Defiantly Dairy-Free! The sign says everything you need to know about the intense Vegan attitude of the people working here. Spoiler alert: I love this place! I found Vegan Fine Foods™ with a Google Maps search. I’m in Broward County visiting my mom for her 99th birthday. I’ve been seriously Vegan hesitant in this home of fruits and veggies. It seems odd but finding Vegan dishes is hard here and I’m done with salads, bagels, fries and hoping the local Thai joint doesn’t use fish oil in their excellent veggie panang curry. Made this awesome vegan curry from the recipe I got over at Cookie and Kate. The photo, not the best, is from lunch today after two days of mellowing in the fridge. Thai is always better after time in the fridge.

Pretzels! Yum
Made these awesome, vegan pretzels from Sally’s recipe, minus the butter. It’s the first time I’ve made pretzels and I’m more than happy with the results. My kitchen was a floured disaster but cleanup was easy. My only regret is I should have left them in the oven for another minute or two but they are fully cooked and delicious.
