    Best Vegan Hotdogs

I’ve loved hotdogs since I was little and my favorite has always been grilled, with a special touch that brings out the best taste. Field Roast Stadium are beyond a doubt, the absolute bestest vegan dogs. Period My trick is to grill them until slightly brown, then slice lengthwise almost through. Grill both sides until crisp. You won’t be disappointed in this method that I learned at Walter’s Hot Dogs in Mamaroneck, NY. Notice the crispy inside. Yum

Home-fries, caramelized onions and Just Egg

One of my favorite breakfast items is home-fries. Not hash browns, mind you, home-fries and this recipe is totally based on the ones my mom always made the day after baked potatoes for dinner. Baked potatoes are the basis for home-fries so I always bake an extra or two.

    Learning from failure

I did everything right. Laid out my ingredients. Chopped and double chopped the red cabbage, carrots, sprouts and glass noodles. I used a cornstarch slurry to glue the corners of the wraps even. Then I left them in the air fryer a minute too long! Sad but still edible, plus it’s a learning experience. Right? Seriously. We cannot use recipe times for frying or baking when cooking in the air fryer. Always, ALWAYS, lessen the time and keep an eye on it. Mine is one of those air fryer, oven, toaster, air roasters with a glass door and I will never not pay attention again. I could have paused the World Series for…

    Chocolate Cream Pie

Absolutely delicious pie I made from a recipe I found at The Vegan 8 but. I only had dark chocolate chips and wish I’d hunted further for other vegan chips. Also it set up very hard and needs a few seconds of microwave to soften. The Reddi whip vegan is awesome and next time I think I’ll add some into the mix. A requirement is cashew butter and I had loads of fun making some with their instructions. The raspberries were already in my frig and later on I also added some shredded coconut. Yum

    Love These Overnight Oats

Overnight oats which are my winter, stick to your ribs, go to breakfast. This batch I decided to change it up and mix in fresh raspberries and some stevia sweetener. Wow! So wonderful and refreshing in the morning. I use Quaker Overnight oats. Are they any different? I have no clue. The raspberries were mixed in before putting in the refrigerator overnight, but you can add them in the morning which also leaves the option for other mix ins. I did it this time as an experiment and I’m pleased. The oats absorbed raspberry flavor. I like them either way. But next time I’ll probably revert to adding in at meal time. That…

    So Powerful

I’ve often wondered when an artist would craft the meme that not only captures our Vegan empathy, but gets meat eaters thinking without using blood and gore. @compassion_over_cruelty on Instagram has done just that with this series. Here is their ig caption and the full series They both are sentient animals who feel pain, fear, love, and empathy. Yet the dog will have a day of being cherished, while the pig will be brutally slaughtered for humans’ selfish desire to consume meat. Meat isn’t necessary for us to be healthy, it harms the environment, and hurts BIPoC communities. For the love of our earth and animal companions, go vegan. @compassion_over_cruelty #vegan #vegetarian #vegansofig…

    Waste Not

Just read and got enlightened by a Food Network article by Laura Denby. Things to do with veggie scraps that I didn’t think of. I’ve been composting for years, but admittedly not enough. These ideas from vegetable stock to pesto and succotash are just what I need to get more enjoyment from my kitchen while helping the environment. https://www.foodnetwork.com/fn-dish/recipes/4-clever-things-to-do-with-veggie-scraps I’m gonna make succotash for my visiting, vegan grandkids next week. Yummy

    My One Year Veganniversary

Yesterday, June 10, I celebrated one year of living vegan. So, this is my belated Happy Happy to me 🥰🌱🎉🍾👏👍🥃😷 It was so much easier, yet harder than I ever imagined. I was the ultimate carnivore, eating wings a minimum of 4 times a week. Steak, burgers and my fav, sausage and egg sandwiches for breakfast. I find it so weird that I don’t miss any of it. Not once have I craved. And vegan sausage and egg substitute sandwiches are awesome. So are Field Roast Italian sausage, peppers and onions oh my! I love Thai cooking and I’m slowly learning the art, since I could actually eat Thai every meal. Every meal that…

    Insanely Tasty Quarantine Panang Curry

Thai is my favorite food and beyond easy to make Vegan. For my year of being Vegan, I have been trying different recipes while also learning to actually follow the recipes. I finally got it right while still not following 100%. For this delish meal, I used Cookie and Kate’s recipe and rather than write out the recipe, I’ll invite you to visit their site for in-depth instructions. Cookie and Kate
