Penne Pasta with Vegan Sausage and Peppers
One of my favorite Italian dishes has long been the Rigatoni Abruzzi at our local Bertucci’s . The dish is somewhat spicy with Vegetarian Italian sausage and green peppers. I’ve been trying to duplicate the flavor and texture as a Vegan dish and I’ve finally got it!

Penne Pasta with Vegan Italian Sausage and Peppers
A slightly spicy and simple pasta dish with a touch of garlic and the main ingredient, Field Roast Vegan Italian Sausage

Equipment
- Skillet
- Pot
Ingredients
- 1 Large Green Pepper
- 2 tbsp Olive Oil
- 12 oz Barilla Roasted Garlic Pasta Sauce We like Barilla but please use your favorite
- 2 links Field Roast Italian Sausage
- 4 handfuls Barilla Penne Pasta Use Rigatoni or any ridged, tubular pasta
Instructions
- Bring water to boil per instructions on box
- Add pasta and set timer for 12 minutes
- Heat 2 tbsp olive oil in a 12" skillet, over medium high heat
- Slice pepper and sausage
- At 8 minute mark, add sausage and pepper to the skillet
- Periodically, stir
- Add the sauce at approximately the 11 minute mark
- Drain the Al Dente pasta and add to the skillet
- Stir for 2 minutes or until sauce begins to boil
