Insanely Tasty Quarantine Panang Curry

Thai is my favorite food and beyond easy to make Vegan. For my year of being Vegan, I have been trying different recipes while also learning to actually follow the recipes. I finally got it right while still not following 100%.

I did make Jasmine rice by following the instructions on the resealable bag. Why have I never done this before? I’ve rinsed boiled and simmered forever, but the trick of removing the rice from the heat and letting it sit for 10 minutes before fluffing is the sticky rice secret. Truly yummy.

Please my Vegan friends, be careful and read labels well. Many curries contain fish oil or shrimp but there are fine, vegan versions. I got my Panang curry paste at a local Asian market we’re blessed with. I’m glad I stocked up before lockdown and I hope the market survives the pandemic.
