One of my favorite Italian dishes has long been the Rigatoni Abruzzi at our local Bertucci’s . The dish is somewhat spicy with Vegetarian Italian sausage and green peppers. I’ve been trying to duplicate the flavor and texture as a Vegan dish and I’ve finally got it!

A slightly spicy and simple pasta dish with a touch of garlic and the main ingredient, Field Roast Vegan Italian Sausage

Equipment

  • Skillet
  • Pot

Ingredients

  • 1 Large Green Pepper
  • 2 tbsp Olive Oil
  • 12 oz Barilla Roasted Garlic Pasta Sauce We like Barilla but please use your favorite
  • 2 links Field Roast Italian Sausage
  • 4 handfuls Barilla Penne Pasta Use Rigatoni or any ridged, tubular pasta

Instructions

  • Bring water to boil per instructions on box
  • Add pasta and set timer for 12 minutes
    Pasta boiling
  • Heat 2 tbsp olive oil in a 12" skillet, over medium high heat
  • Slice pepper and sausage
  • At 8 minute mark, add sausage and pepper to the skillet
    Peppers and Sausage in skillet
  • Periodically, stir
  • Add the sauce at approximately the 11 minute mark
    Sauce added
  • Drain the Al Dente pasta and add to the skillet
    Pasta added
  • Stir for 2 minutes or until sauce begins to boil
  • Mangia
    Completed dish
