Labor Day Favorite – Vegan Sandwich
My old self had this dread of turning vegan that was based on my own ignorance. I was experienced with the salads, nuts, pasta with plain sauce and veggie burgers I snuck into the trash while eating with vegans I know. I hadn’t done my research.
But, I was determined to turn vegan and learn how I, a raw tomato hating, spicy meaty sauce loving old guy could survive on a plant based diet. I had to find more than PB&J in all it’s wonderful variants. Yes, I can live on vegan Asian curries and Asian salads but there had to be more.
Enter the Sausage, Peppers and Onion sandwich. I’m the guy who got them at every ball game and state fair. Yes, I’m repeating myself from my review of Vegan Fine Foods, but it needs repeating. Sausage sandwiches are life changing.
And so dang easy to make!
Use a very hot pan and olive oil. Cook your peppers and onions about halfway to caramelized then add the sausage. I’m loving the Field Roast ™ Italian with it’s tangier Italian spices. I like mine sliced lengthwise to char on all side. Add your favorite mustard and enjoy.
