Ho ho ho, Healthy Claus here to stuff your stockings full of fresh veggies and hummus so gear up! Get those Boulder Canyon potato chips out–it’s Santa Veggie Tray time. What better way to celebrate the season then to create this ultra easy-to-make dip? Let’s be real, with all the cookies, cakes, and chocolate you are going to endure this season (read: already are enduring…and no judgment), you at least need a few dishes that are not only festive but still filled with a balance of goodness. It’s why I always grab for the Boulder Canyon brand. They have a unique selection of different better-for-you oils that they cook their potatoes in (like Rice Bran, Coconut, Avocado oils).

All you need to make this Santa Veggie Tray is the following:

  • 1 bag of Boulder Canyon potato chips (for the beard)
  • 1 tub of hummus of choice (for Santa’s face)
  • 2 red bell peppers (for the Santa hat and lips)
  • 1/2 c. cauliflower florets (for part of the Santa hat)
  • 3 cucumber slices (for the eyes)
  • 2 black olive slices (for the eyes)
  • 2 radish slices (for the cheeks)
  • 1 baby carrot (for the nose)
  • 1 c. broccoli

Santa Veggie Tray

Ingredients

  • 1 bag of Boulder Canyon potato chips (for the beard)
  • 1 tub of hummus of choice (for Santa’s face)
  • 2 red bell peppers (for the Santa hat and lips)
  • 1/2 c. cauliflower florets (for part of the Santa hat)
  • 3 cucumber slices (for the eyes)
  • 2 black olive slices (for the eyes)
  • 2 radish slices (for the cheeks)
  • 1 baby carrot (for the nose)
  • 1 c. broccoli

Instructions

  1. Spoon out the hummus onto a tray in an oval shape.
  2. Slice up both of the bell peppers into thin strips, leaving 2 small pieces from the top of the pepper for the lips. Place the strips on top of the hummus for the hat.
  3. Line the bottom portion of the hat with small cauliflower florets and add the tip to the end.
  4. Add the potato chips all along the bottom of the platter for the beard.
  5. Place the 2 slices of radishes for the cheeks.
  6. Add the bell pepper lips, carrot nose, and cucumber/black olive eyes.
  7. Serve immediately.
