Cucumber Sushi Rolls

Reinvent the sandwich in your kid’s lunchbox with these Cucumber Sushi Rolls. A sandwich filling surrounded by a cucumber “roll,” this fun lunch idea is perfect for the dipping. My Dairy Free Ranch Dressing would be perfect for taking a dive into.

Now of course you’re not going to be making lunches like these everyday but for those special occasions when you want to do something different and a little fun, these Cucumber Sushi Rolls are a creative way to serve a sandwich to your little one. And since we are always trying to find ways to serve veggies to our kids, why not use cucumbers instead of bread? Or instead of rice, really. These are supposed to be sushi rolls but you get my point…

What you’ll need for these Cucumber Rolls:

  • Large cucumber, sliced into 1 1/2-2″ slices
  • small circle cookie cutter
  • favorite sandwich filling (turkey, ham, cheese, use vegetarian versions too!)
  • chopped lettuce
  • shredded carrots

The idea for stuffing them is simple:

  1. Assemble everything on top of each other
  2. Tightly roll
  3. Slice
  4. Insert into a cucumber “roll”

    8 Cucumber Sushi Rolls (4 per serving)


Ingredients

  • 2 large cucumbers, sliced into 2″ slices (should have slices 8 total)
  • small circle cookie cutter
  • 4 thin slices favorite sandwich filling (turkey, ham, use vegan versions too!)
  • 2 large slices cheese (I used deli swiss cheese)
  • 1/2 c. chopped lettuce
  • 1/2 c. shredded carrots
  • Dairy Free Ranch Dressing for dipping

Instructions

  • Large cucumber, sliced into 1 1/2-2″ slices
  • small circle cookie cutter
  • favorite sandwich filling (turkey, ham, cheese, use vegetarian versions too!)
  • chopped lettuce
  • shredded carrots

The idea for stuffing them is simple:

  1. For each cucumber slice, cut out the middles with the circle cookie cutter. You can save the insides for a salad, juice, or a smoothie for no waster.
  2. Place 1 slice of lunch meat on top of 1 slice of cheese. Add the 1 Tbsp. lettuce and 1 Tbsp. shredded carrots towards the bottom half of the meat and cheese layer.
  3. Tightly roll from the bottom up.
  4. Holding one end with your hand, slice the other end in 2″ slices so it will fit nicely on the inside of the cucumber.
  5. Place the filling roll inside the cucumber.
  6. Repeat for the remaining slices.


Notes

You can put 4 cucumber rolls into your kid’s lunchbox and save the other 4 for another lunch day. Will keep well in the fridge in an air-tight container for up to 3 days.
